Welsh Rarebit

I’m told that name of this dish is a derogatory corruption of rabbit, with the implication that the Welsh couldn’t afford the real thing. But that’s the kind of smear you should expect from a nation that annexes its neighbor. On the other hand, grilled cheese on toast is a classic. On my travels, I discovered that New Zealanders often put condiments between the toast and the cheese. This is my personal favorite:

  • Slice of bread, toasted (whatever your favorite kind of bread is)
  • Sweet chili dipping sauce
  • White cheddar cheese (sliced)
