Double Choc Chip Muffins

While I was digging around in my New Zealand road trip journal for the Anzac biscuits recipe, I found this recipe next to it. Apparently I did quite a lot of baking during my stay in the Brown Kiwi in Auckland. It was the top hostel listed in a French backpacker’s guide, so there was a large French contingent. I remember playing two hours of football one Sunday with them. They were much younger and seemed unaffected afterward, while I was barely able to walk. But mostly I remember the evenings spent drinking pastis and playing cards. I also remember Patrice, the professional French baker who couldn’t cook anything in a pan without blackening it. In fairness, they were not great pans.

  • 450 g self-raising flour
  • 110 g caster sugar
  • 125 g butter (coarsely chopped)
  • 2 eggs
  • 25 g cocoa powder
  • 170 g choc chips
